Protein Pancakes Recipe

Today we are going to share with you a recipe for gluten-free, dairy-free and refined sugar free pancakes.

These make the ideal breakfast. Filling, satisfying and healthy!

  • 5 tablespoons gluten free oat flour (oats ground to flour)
  • 1 flax egg (1 teaspoon flax seeds mixed with 2 tablespoons water and leave to mix)
  • 1 scoop protein powder of choice
  • A little almond milk to get runny consistency

Mix all of the above ingredients and blend with a hand whisk to ensure no lumps.

Heat a little coconut oil in a non stick frying pan and pour a couple  of tablespoons of the batter into the pan,

Cook until golden brown and flip.

Top with topping of choice. Here I used agave syrup and grilled persimmons.
Other good options are : Peanut butter, pure maple syrup, strawberries.
